A fiery, glossy Mangalorean classic where chicken is slow-roasted in thuppa with roasted Byadgi chillies until deeply caramelised.
The Story Behind This Recipe
My mother made this every Sunday in our Mangaluru home. The secret is letting the Byadgi chillies roast slowly until they deepen to a mahogany red — no shortcuts. We would eat it with neer dosa folded into small triangles, the dosa absorbing every drop of the glossy masala.
Ingredients
- 500g chicken, bone-in
- 10 dried Byadgi chillies
- 1 tbsp coriander seeds
- 1 tsp cumin seeds
- 4 tbsp thuppa
- 1 tbsp tamarind paste
- Curry leaves and salt

Instructions

Dry roast the chillies and whole spices, then grind to a smooth paste with tamarind.

Marinate the chicken in the paste with salt for 30 minutes.

Heat thuppa, add curry leaves, then the chicken with its marinade.

Roast on medium heat, stirring often, until the masala clings and glistens.
